Crispy Potatoes
Crispy potatoes are spicy and shallow fried potatoes which are cooked with mustard oil on a iron skillet.

Ingredients:

Potatoes: 500 gms

Fenugreek seeds: 2 tablespoon

Red whole dried red chilli: 1-2

Red chilli powder: 1.5 teaspoon

Coriander powder: 4 tablespoon

Turmeric powder: 2 tablespoon

Dry Mango powder: 1 tablespoon

Garam Masala : 1 teaspoon

Asafoetida / Heeng : 2-3 pinches

Salt: 2 teaspoon as per taste

Water: 1-2 tablespoon

Mustard oil: 4-5 tablespoon

Fresh coriander leaves: 2 tablespoon
Method:
1. Wash the baby potatoes and peel the skin off.
2. Now, slice the potatoes evenly in to thin slices.
3. Heat the mustard on a cooking pan or iron skillet. When oil is hot, add dried red chilli, fenugreek seeds and asafoetida. Roast them nicely.
4. Now add other spices such as turmeric powder, red chilli powder, coriander powder, salt. Mix it well.
5. Add the sliced potatoes to the spice mixture and mix it very well. Add 2 tablespoon of water if the mixture looks very dry. Cover the pan with lid and cook it for 5-10 minutes.
6. When potatoes start cooking, then remove the lid. Now cook them on medium heat without any lid so that all the moisture goes away from the potatoes and they turn crispy.
7. Flip the potatoes in between so that they turn crispy from all around. Now sprinkle dry mango powder and garam masala. Sprinkle some fresh coriander leaves for garnishing.
8. Crispy potatoes are ready to serve :-)
