Gobhi Paratha (Cauliflower Stuffed Bread)
It is stuffed bread recipe from North India where spiced cauliflower mixture is used for stuffing the bread.
Serves: 6
Ingredients:
For Dough:

Wheat flour: 2 Cups

Salt: 2 pinches

Water: for kneading the dough

Oil/Butter ghee: 1 teaspoon
For Stuffing:

Cauliflower grated: 2 cups

Ginger: 1 teaspoon

Green chilli chopped: 1
-
Salt: as per taste
-
Red chilli powder: 1/2 teaspoon

Coriander powder: 1.5 tablespoon
-
Garam Masala: 1/2 teaspoon
-
Fresh coriander leaves: 2 tablespoon
Method:
For Making Dough:
1. Mix flour and salt in a bowl. Add water gradually to knead the soft smooth dough. Knead with 5 minutes. Put some ghee/oil to the dough and knead it again to give it a smooth texture. Keep it for rest for 15-20 minutes.*
*Don't add too much water as it makes dough sticky and runny.
For Making Cauliflower Stuffing:
2. Boil the grated cauliflower for 3-4 minutes in hot water. Drain and squeeze out all the water from cauliflower using some muslin cloth or strainer and put in separate bowl.
3. Now add all the spices, grated ginger, chopped green chilly and coriander leaves to the cauliflower. Mix all the ingredients. Stuffing is ready.
For Making Breads:
4. Take a small portion of dough and give it a round ball shape between your palms. Now put some dry wheat flour over the dough ball. Roll a bit round. Put few drops of oil on the bread and put 2 tablespoon of mixture. Now close from each side to make a stuffed bread.
6. Put some more wheat flour on the rolling surface. Roll the bread slowly and carefully to give a round shape. Mixture should spread evenly with in the bread.
7. Now cook this bread on the hot tawa/pan from both sides until it gives brown spots on surface. Now put some oil on the bread and spread it all around. Now cook the bread with laddle by pressing the bread a bit. When it is cooked from both sides.
8. Remove it on a separate serving dish and serve it hot with butter or yogurt.
